I tried Thunderbird but it’s got a lot going for it. I just want something simple and minimal

If you have a Qt based desktop (KDE, LXQt…) use Kmail.
If you have a GTK based desktop (Gnome, XFCE…) use Geary.Maybe Geary is what you are looking for?
I’m happy with Evolution.
